looking for a bean/rice burger recipe (vegetarian)

Our son has been vegetarian for several years now, and I have made a decision to almost be vegetarian (it's my modified version which will be no mammal meat->fish and birds are okay to start with)

I know it's weird but between red meat, milk (lots of fat and made for baby cows not humans) and HFC I need a change

My son mentioned some bean, onions and long grain rice burgers that can be baked

I can not stand the texture of the "fake" meat and burgers

I have cooked for years, my problem is cooking things I do miss, a "burger" on a bun, "meatballs" for spaghetti with no red meat or fake meat

so what are some options?

TIA

Oh and I can blame some of this on Hilldweller for his sig line...Thank you for the eye opener

Ps we have used spaghetti squash, egg plant and mushrooms all are good and useful

I was vegan for awhile 10+ years ago, and still make some of my favourite recipes. Black-bean Burgers are easy. Take a can of black-beans (or soak and cook some dry ones), smash them up with minced garlic, pepper, and onion, and bind with fine bread crumbs. Form patties and grill. You can spice however you want (salt and pepper, or corriander).

Hmm, maybe we'll have that tonight.

1 cup cooked brown rice
1 15-ounce can black beans
½ onion, diced
¼ cup corn
1 teaspoon cumin
1 teaspoon garlic powder
¼ teaspoon chili powder
¼ cup cornmeal
2 tablespoons salsa

Pour beans in a medium size bowl and mash them with your hands, potato masher, or fork.
Preheat oven to 350ºF. Preheat a pan and then give it a little spritz with nonstick canola spray.
Sweat the onion in a sauté pan. Sweat means the moisture comes from the veggies so no oil is needed. Just remember to keep a lid on the pan. If the onions do start to stick, add a little bit of water; or just use some spray (I do...)
When onions become translucent add corn and spices. Cook for a few more minutes.
Add cornmeal, salsa, veggies, and rice to bean bowl. Mix everything together so there is an even consistency. Feel free to do this with your hands. Then form mixture into patties. A good thickness is about ½ inch.
Place patties onto pan and bake for 15 minutes at 350ºF. Flip the patties and bake for another 15 minutes.

I use "Success" brown rice ---- I also use cornstarch mixed with tapioca starch to thicken things.
Just got a food processor a couple of weeks ago and I gotta start some new recipes. I got this from FOK's site and modified it a little.
I made some vegan lasagna the other day that was AMAZING....

Thank you

It's been a fun two weeks and I "mentally" think I feel better :sombrero:

I did a similar recipe I used 1 can of dark red kidney beans and white northern, and like 2 cups of onions etc., a quick sprits and into a non stick pan to crisp up, they where good

I will post recipe so there are several to try

they tasted as good as they looked :chef:

The cooked brown rice maybe a cup or two really helped to "lighten" them up and not be 3/4 inch thick solid bricks

I have never tried home made black bean vegi burgers, I just buy Morningstars Black Bean or Chick Pea vegi burgers.
Been eating them all week cooked out on the barbeque.

Those above look good.
Been a vegetarian since meeting my X wife back in '81.

Morningstar Farms is on my naughty list. Technically they're vegetarian but they're certainly not vegan. They and a few others make products that I consider pretty sneaky. They're trying to fool people that don't read the labels.
Their Grillers Prime taste great though...

I know you're looking for burger type recipes, but to honor your switch over to the veggies side of life I want to share these recipes below with you. I'm not veggie or vegan per se, but often prefer to eat that way. Well, that and local and organic as much as I can too.

http://www.epicurious.com/recipes/f...ld-Rice-Hazelnuts-and-Dried-Cranberries-15576 - you could sub the butter with something else.

http://www.chow.com/recipes/27549-spicy-squash-tacos - these are a regular item in my home, but I usually sub sweet potato and veg broth.

http://allrecipes.com/Recipe/Chickpea-Curry/Detail.aspx?evt19=1 - watch the spice on this one. I accidentally doubled mine! It hurt to eat.

Good luck!

Since you said birds are ok, you should find a way to get some ground ostrich. I've been going to this place called the Country House since I was a kid and it's been voted one Chicago's best burgers like every year, and I always go for their ostrich burger over their beef or buffalo. It' a very lean meat so if you liked your burgers medium cook it rare.

Hey Bansil, there is is ton of middle eastern food that is vegetarian and tastes awesome. Have you ever had falafel? It's made with chickpeas or fava beans depending on the country. It's kind of hard to make from scratch but you can find falafel mix in the store. Just add water.

Are you trying to simulate meat or are you just looking for vegetarian recipes? Lintels are awesome. Many different kinds of legumes to try.

ETA. Sorry. just reread the title. Try falafel. I love it so much I have to put it in the trunk if I pick some up to bring home. Otherwise there is nothing left when I get home.

I love peas my wife hates them:D

we have tried a few recipes....we need to be careful..it can get HOT real easy:Wow1:

She is slower to the idea so we are actually cleaning out our freezers and experimenting, we are at 5 days no meat and 2 days very small portions, my new years I am hoping to have her where I want to be

I am not trying to simulate meat...I can't deal with the textures of the "processed FAUX meat" my son loves all of them

I did find some faux-dogs that I really like...you can grill them etc just5 like regular ones "YVES The good dog" taste just like dogs when they have condiments on them

Hardest part is I really miss the Smoking and grill work...that has been hardest to change
